Aly’s SUPER Bean Dip

Ingredients
  

  • 1-2 15 oz. cans of vegetarian refried beans (black or pinto_ 2 cans for a larger crowd. Vegetarian doesn't have lard.
  • 1 15 oz. can beans (black or pinto) Drained and rinsed. Low sodium if possible.
  • 2 Avocados Soft but not overrripe
  • 1/2 Roma tomato Finely diced. Seeds or no seeds is your preference.
  • 1/4 cup red onion finely diced
  • 1 clove garlic minced
  • 1/4 jalapeno pepper (optional) finely diced. (remove seeds if you don't want too hot)
  • 1/4 cup cilantro finely chopped (optional)
  • 1 tbsp lime juice about 1/2 lime
  • 1 tsp Kosher salt
  • 1 cup salsa your favorite brand.
  • 2 green onions finely sliced

Instructions
 

  • Pre heat oven to 350 degrees.
  • In a mixing bowl, combine the refried beans with can of whole beans. Best to use a potato masher.
  • Spray a 9 x 12 baking dish (or size that will accommodate your amount of beans).
    Spread bean mixture evenly.
  • Bake for 20 minutes. When heated through, remove from oven and let cool for about 15 minutes.
  • While bean mixture is heating:
  • Guacamole: Mash the avocados and add tomato, onion, garlic, jalapeno pepper, cilantro, salt and lime juice. Mix well.
  • When bean mixture has cooled (and "set"), spread on the guacamole evenly.
  • Spread salsa evenly over guacamole.
  • Sprinkle finely sliced green onions.

Notes

All the fun and flavor of “traditional” bean dip without the additional fat and calories from sour cream and cheese.  
This is so easy. Feel free to buy pre-made guacamole.
As always, add as much or as little as you like for the seasonings.
