Apple Pie and Chia Overnight Oats

This recipe is one that the whole family loves! A quick and easy breakfast in the morning that can be prepped a couple days ahead of time. These oats are quick, healthy, filling, and packed with healthy fats and fiber.

  • 1 Cup Oats steel cut
  • 1 Cup Chia Seeds
  • 1/2 Cup Peanut Butter unsweetened
  • 1 tsp Cinnamon
  • 2.5 Cups Plant-Based Milk unsweetened
  • 1 Cup Apple Sauce unsweetened
  • 2 Apples chopped into 1/2-inch bites


  • In a large bowl, mix together oats, chia seeds, peanut butter, and cinnamon until combined.
  • Add milk and applesauce and stir until consistent.
  • Add chopped apples.
  • Portion into 4-6 smaller containers.
  • When it comes time to eat, top with nuts, a little more cinnamon, and enjoy!


This is such a fun recipe to make your own! Ingredients can vary based on the flavors you prefer over others. Instead of applesauce, try mashed banana. Or, don’t prep with fruit, but add berries right before eating! I’m excited to see what fun recipes you create!
