Spicy Cucumber Avocado Salad

You are going to love this flavor-packed salad, full of vitamins, fiber, and healthy fats. It's easy to make and would be great as a side or main dish. In the words of Dr. Young's daughter, "Oh my goodness-I would eat the whole salad!"

Ingredients
  

Dressing

  • 2 Tbsp Olive Oil or Avocado Oil
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Garlic Powder or Fresh Garlic minced
  • 1 tsp Cumin
  • 1 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 Lime juiced

Salad

  • 2 Cucumbers diced
  • 1 Avocado diced
  • 1 Cup Tomatoes halved
  • 3 Tbsp Cilantro chopped

Instructions
 

  • In a small bowl, mix all dressing ingredients and set aside.
  • In a large salad bowl, dice salad ingredients and mix well.
  • Coat salad in dressing, top with cilantro, and enjoy!

Notes

I made my salad pretty spicy, but if you are not a big spice person I would recommend only 1/2 tsp of red pepper flakes in the dressing.
If you would like to omit oil, you could also blend the avocado with the dressing spices and use this to coat the salad.
