
Breakfast Banana Splits!
We recently discovered Breakfast Banana Splits. I saw a picture of them on Instagram but have no idea who posted or deserves the credit. Sorry friend!
We have a decent list of breakfast favorite: smoothies, oatmeal, peanut butter toast, avocado toast, whatever muffin or bread my kids decided to bake, pancakes, french toast, tofu scramble or burrito (my fave/not the kids…yet), breakfast hash, overnight oats, chia seed pudding…the list goes on. But while we have a decent list, we tend to get into ruts. So I was excited to see the picture of a Breakfast Banana Split online the other day to add to our list.
The good news with things like this is that the kids can make their own and everyone can put on what they like. I set out the ingredients and they go to town.

Today’s Ingredients
Bananas – of course
Blueberries
Honey Toasted Walnuts*
Pumpkin Seeds
Seven Sundays Rise and Shine Mix
Autumn’s Gold Grain Free Granola
Coconut Flakes -unsweetened
Cashew Cream **
Coconut Yogurt
Other Ideas
Any type of yogurt
Any type of seed or nut
Any type of berry
Dried gogi berries or raisins
Whatever else you think sounds good!
Instructions
Simple: Start with banana base and make it look pretty!
*Honey Toasted Walnuts: To ½ cup of walnuts, add a tablespoon of honey in a frying pan over medium heat stirring frequently for about 10 minutes. Some days I add spices – cinnamon, cayenne, nutmeg etc. These are a great snack for the kids and easy to make. They are usually gone before they are cooled and done!
**Cashew Cream (similar to sour cream but with no saturated fat, wink!): pour boiling water over ½ cup of cashews and soak for approximately 15 minutes. Drain. Blend cashews with ½ cup of water and 1 tsp of lemon juice or apple cider vinegar until smooth. This was fantastic on my banana split, but is a great topping for potatoes, mix in to make a soup creamy or addition to your tacos. The possibilities are endless!
