Delicious, Versatile and Vitamin-Packed Cashew Queso

Dreamy, dairy-free cashew queso that’s secretly good for you! This creamy, versatile sauce, naturally colored and vitamin-packed with orange bell pepper, is the perfect plant-based hero. Love it mild on pasta or spicy as a dip; one blend creates endless possibilities.

Ingredients
  

  • 1/2 cups raw cashews Soaked overnight or for 15 minutes in hot water
  • 1 cup Water
  • 3 tablespoons Fresh lemon juice
  • 1/2 cup Nutritional yeast
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoons Salt
  • 1 Orange bell pepper or carrot

Instructions
 

  • Soak Cashews
  • Add all ingredients to a high speed blender and blend until creamy 2-3 minutes
  • Adjust water and seasoning as needed

Notes

The bell pepper or carrot add a yellow color but also FIBER and VITAMINS and you can’t taste it, trust me.
You can add seasoning – leave as is for Mac n cheese or add cayenne to spice it up or Chile powder to make a chili Mac.
You can’t beat the vitamix for this. If you don’t have one ask Santa!

Mix a box of red lentil pasta cooked according to package directions, add this yummy cashew queso, roasted chick peas and top with whatever veggies you have in your fridge!
