Chestnut Stuffing

Savory and delicious Thanksgiving side dish

Ingredients
  

  • 1 lb sourdough bread stuffing cubes bakery section of grocery store or 1.5 loaves of stale bread cut into cubes
  • 1 cup vegetable broth
  • 1 tsp olive oil
  • 1/2 onion diced
  • 1 carrot diced
  • 2 stalks celery diced
  • 1 5 oz. bag cooked chestnuts-chopped
  • 1/2 tsp Rosemary
  • 1/2 tsp Sage
  • 1/2 tsp Thyme
  • 2 tsps Fresh parsley 1 tsp for mixture; 1 tsp for topping
  • 1 tsp olive oil

Instructions
 

  • Preheat oven to 375 degrees.
  • In a heated pan, add olive oil.
  • Saute onion, carrot, celery, and water chestnuts for about 5-6 minutes.
  • Put bread cubes in a large mixing bowl. Add broth, veggies, and seasonings
  • Mix together well until the bread absorbs all the liquid.
  • Spray a 9 x 12 baking dish. Spoon mixture into dish.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for another 20 minutes.

Notes

This is just wow.  You won’t miss the added butter. For those who are used to sausage, the chestnuts are a great substitute.  The savory seasonings make this taste like Thanksgiving feels.
