Christmas Pasta Salad

A healthy and festive dish for a holiday pot luck.

Ingredients
  

  • 2 cups dry farfalle (bow) pasta cooked and drained per package directions-do not rinse
  • 2 cups fresh spinach 1 cup chopped and 1 cup whole leaves
  • 2 cups cherry or grape tomatoes quartered. (reserve 8 for decoration)
  • 1/2 cup pistachio nuts optional

Vinaigrette

  • 6 tbsps olive oil
  • 1 tbsp lemon juice
  • 1 tbsp vinegar red, white or balsamic
  • 1 tsp agave or honey
  • salt and pepper to taste

Instructions
 

  • Cook and drain pasta per package directions. Do not rinse.
  • After draining, add back to pot.
  • Whisk vinaigrette ingredients.
  • Add chopped spinach, tomatoes, and vinaigrette. Mix thoroughly. Cover pot for five minutes.
  • Transfer to serving piece. Shallow bowl or platter.
  • Cover with wrap and refrigerate for an hour.
  • When cooled, arrange spinach leaves and tomatoes to resemble a wreath.

Notes

This dish is very flexible. Any combination of red and green veggies will work, keeping the spinach as garnish.  Can use peas, broccoli, red pepper, etc.  
For the vinaigrette: season to taste.
Note: Levels of resistant starch in pasta, rice, and potatoes are in creased by cooking and cooling.
