Halloween Healthy Snacks: Avocado Mummies

Avocado Mummies

These adorable Avocado Mummies are the perfect open-faced sandwich for a healthy and festive Halloween snack! They come together in minutes and are a fantastic way to add a fun, spooky twist to a nutritious treat.
Servings 6

Ingredients

  • 6 slices Whole wheat sandwich bread
  • 2 Avocados not overly ripe
  • For the “eyes”: 12 pitted olives or smoked tofu balls low in sodium
  • Plant-based spreadable cheese cashew, almond, or any creamy dairy-free base
  • Seed mix pumpkin, sunflower, black sesame
  • Black pepper
  • Salt
  • Optional: Lemon juice to prevent the avocado from oxidizing

Instructions

Toast the base:

  • Toast the slices of whole wheat bread until golden and crispy.

Prepare the "bandages":

  • Peel the avocados and, using a vegetable peeler or mandoline, slice the flesh into long, thin strips that will mimic mummy bandages.
  • If preparing in advance, drizzle the strips with a little lemon juice to prevent them from darkening.

Create the creamy base:

  • Generously spread the toasted bread with your chosen plant-based cheese. This layer will act as the "glue" for the bandages.

Bandage the mummy

  • Place the thin avocado strips over the spreadable cheese, crossing them in a slightly messy way to create a tangled bandage effect.
  • Leave a small space uncovered at the top center of the toast, which is where the eyes will go.

Add details

  • Place two olives (or two tofu balls) in the uncovered space to create spooky eyes. If using olives, you can place a white sesame seed or a small dot of plant-based cheese inside to make the pupil.

Final touch

  • Sprinkle the toasts with the seed mix for texture, a bit of freshly ground black pepper, and a pinch of salt.
