Ingredients

  • 4 Firm bananas
  • 8 ice cream sticks or long skewers
  • 1 cup Vegan Greek-style coconut yogurt thick
  • 2 tbsp Cashew cream or tahini
  • 1 tbsp Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 tbsp Finely shredded coconut For texture
  • Unsweetened dark chocolate chips For eyes

Instructions

Prepare the ghosts:

  • Peel the bananas and cut them in half, then insert a stick into each half, as if they were popsicles. Finally, place them on a baking tray with parchment paper and freeze for 20 minutes.

Coating:

  • Coating: In a bowl, mix the coconut yogurt with the cashew cream (or tahini), maple syrup, and vanilla. Add the shredded coconut if using, to give texture and body. Finally refrigerate the mixture for 15 minutes to thicken.

Coat the ghosts:

  • Remove the bananas from the freezer. After that, use a small spatula to cover each banana with the yogurt mixture, forming a thick layer and shaping them into ghosts. Ensure the coating is even but with irregular edges for a ghostly effect.

Decorate and freeze:

  • Place two chocolate chips as eyes, then freeze for 2-3 hours until firm.
