These adorable Mini Mummy Pizzas are the perfect healthy Halloween snack! Featuring a simple gluten-free crust, a creamy cashew-tomato sauce, and cheesy "bandages," they're fun to make and delicious to eat.

Ingredients
  

  • For the Pizza Dough:
  • ½ cup Oat flour 65g
  • ½ cup Chickpea flour 65g
  • ¼ teaspoon Sea salt
  • 2 teaspoons Extra virgin olive oil
  • 6-8 tablespoons Water
  • For the Pizza Sauce:
  • ½ cup Raw cashews soaked 2+ hours
  • 14.5 oz Crushed tomatoes
  • 3 tablespoons Tomato paste
  • 4 Sun-dried tomatoes packed in oil, drained
  • 2 cloves Minced garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • ½ teaspoon Onion powder
  • ¼ teaspoon Smoked paprika
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • ½ teaspoon Maple syrup
  • Salt to taste
  • ¼-½ cup Water for consistency
  • For Topping & Decoration:
  • 4-6 slices Vegan cheese
  • 6 Black olive slices
  • 2-3 Large white mushrooms thinly sliced
  • 1 teaspoon Olive oil for mushrooms
  • Optional: oregano garlic powder, black pepper

Instructions
 

Prepare the Pizza Sauce:

  • Soak the raw cashews in hot water for at least 30 minutes until softened, then drain.
  • Transfer to a blender and add the crushed tomatoes, tomato paste, sun-dried tomatoes, minced garlic, dried herbs, spices, olive oil, balsamic vinegar, and maple syrup
  • Blend until completely smooth, adding water as needed to reach a spreadable consistency. Adjust seasoning to taste and set aside.

Prepare Mushroom Decorations:

  • Thinly slice the mushrooms and sauté in olive oil for 2-3 minutes per side until lightly golden but still pliable.
  • Cut into circles for eyes and thin strips for bandage details.

Make Pizza Bases:

  • Preheat the oven to 200°C. Combine oat flour, chickpea flour, salt, olive oil, and water in a bowl.
  • Mix until dough forms, adjusting with more flour or water as needed.
  • Divide into three portions, shape into rounds, and bake for 10 minutes until firm.

Assemble and Bake:

  • Spread sauce over the pre-baked bases.
  • Arrange vegan cheese strips to resemble bandages.
  • Add mushroom decorations and black olive slices for eyes. Return to the oven for 5-10 minutes until the cheese melts and edges are golden.
  • Let cool slightly before serving.
