Ingredients
  

  • 500 grams Pumpkin
  • 2 Units of carrot
  • 2 Units of spring onion
  • 1 liter Vegetable broth
  • 1 Unit of potato
  • 250 ml Plant-based cooking cream soy, oat, or coconut
  • 100 grams Plant-based cream cheese dairy-free
  • Extra virgin olive oil
  • Salt
  • White pepper
  • Aromatic herbs for decoration parsley, chives, or rosemary

Instructions
 

Sauté the vegetables:

  • In a pot with a little olive oil, sauté the peeled and chopped potato and spring onions over medium heat for 5 minutes.

Add the remaining vegetables

  • Add the peeled and chopped pumpkin and carrots. Season with salt and pepper to taste and sauté everything together for another couple of minutes.

Cook the cream:

  • Pour in the liter of hot vegetable broth. Cover the pot and let it cook for 30 minutes, or until all the vegetables are tender.

Blend and strain:

  • Once cooked, blend the mixture with an immersion blender until smooth. For an extra fine and silky texture, pass the cream through a sieve. The sieve step is optional but makes a difference.
  • Final touch: Return the cream to the pot (over low heat) and add a splash of the plant-based cream. Stir and adjust salt if necessary.

Prepare the "spider web":

  • In a bowl, mix the plant-based cream cheese with another small splash of plant-based cream. The texture should be suitable for decorating with a piping bag. If it's too thick, add a little more cream; if it's too runny, add more cream cheese.
  • Serve the hot cream in bowls. Decorate the top with the plant-based cheese mixture, drawing a spider web. Finish with fresh aromatic herbs on top.
