  • 8 Medium-colored bell peppers a mix of orange, yellow, and red works best
  • 1 Red bell pepper
  • 400 grams Long-grain rice
  • 1 Onion
  • 1 Handful of raisins
  • 1 Splash of soy sauce
  • Olive oil
  • Salt
  • Pepper
  • Black olives for decoration

Instructions
 

Create the Jack-o'-lanterns:

  • Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
  • Wash and dry the colored bell peppers.
  • Carefully cut off the top with the stem to use as a lid. Remove the seeds and white ribs.
  • Using a small, sharp paring knife, carefully carve spooky faces into each pepper—try triangles for eyes and a jagged mouth for a classic look.

Roast the Peppers

  • Place the carved peppers on a baking tray. Drizzle them with a little olive oil and season with salt and pepper.
  • Roast in the oven for about 30 minutes, or until they are slightly softened but still hold their shape.

Cook the Rice

  • Rinse the rice. In a pot with a little oil, sauté the rice for a minute, then add water and salt.
  • Cook according to package instructions, usually for 15-18 minutes.

Prepare the Filling:

  • While the rice cooks, finely chop the onion and the remaining red bell pepper.
  • Sauté them in a large frying pan with a little olive oil until softened.

Combine Filling:

  • Add the cooked rice, raisins, and a splash of soy sauce to the pan. Mix everything well and cook for another 2-3 minutes.

Assemble the Monsters:
