June Recipe: Nourish Bowls

Buddha Bowl

Buddha Bowls are the perfect midweek dinner and are easy to meal prep! What I love most about Buddha Bowls is that the variety of ingredients can be used in different recipes throughout the week, or prepped and eaten as a snack. With whole grains, veggies, and protein, these are great dinners that support your nutrition goals. This recipe is from one of my favorite recipe sites, Love and Lemons. Let us know what you think!

Ingredients
  

  • 1 Sweet Potato cubed
  • 2 Red Radishes sliced
  • 2 Carrots ribboned
  • 1 Cup Red Cabbage shredded
  • 1 Cup Kale chopped
  • 2 Cups Brown Rice
  • 1 Cup Chickpeas cooked
  • 3/4 Cup Sauerkraut
  • 2 Tbsp Hemp Seeds
  • 1/4 Cup Microgreens
  • 1 Tbsp Olive Oil

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit.
  • Spread cubed sweet potato evenly across baking sheet. Drizzle with olive oil, salt, and pepper. Roast in oven for 20 minutes, or until golden brown.
  • Combine sliced radish, ribboned carrots, chopped kale, and shredded cabbage in a bowl. Drizzle with lemon juice.
  • Assemble bowls by adding brown rice, cooked chickpeas, the veggie mixture, and sweet potatoes. You can choose to top with sauerkraut and micro greens.
