Notes

When I used to make salads I would pick just the right ingredients that I thought would mesh well: 
  • Greekish – Greens, tomato, avocado, red onion, cucumber, garbanzo beans
  • Sweet summer – Greens, strawberries, pecans, red onion
  • Mexican – Greens, black beans, peppers, onions, tomatoes 
All of those are yummy salads that I will make again!
But I have come to know and love the Kitchen Sink Salad. In this salad, I put whatever I have in my fridge without wondering if it is going to taste good together and you know what, %100 of the Kitchen Sink Salads that I have made have tasted awesome. I know that is a bold statement, but really I can’t think of any that I was like, meh, shouldn’t have put that in. I like to make sure I have a protein (beans/nuts/lentils/seeds etc.) and if I have leftover grains of some sort I almost always mix those in.
Pick a vinaigrette that you love, throw in everything but the kitchen sink and enjoy!
Some favorite mix ins:  
  • Whatever vegetables or fruits (berries, halved grapes, sliced pears or apples) might go bad if I don’t use it in the next couple of days
  • Sauerkraut/Kimchi
  • Leftover veggies from dinner (roasted broccoli or cauliflower, grilled peppers, sauteed mushrooms, air fryer green beans…whatever!)
  • Frozen corn or peas
  • Freeze dried corn
  • Leftover or bagged grains – brown rice/quinoa, ancient grains
  • Garbanzo beans, great northern beans, black beans, shelled edamame
  • Pumpkin seeds, flax seeds, chia seeds, sunflower seeds
  • Dried cranberries
  • Avocado
  • Hummus
  • Beets
