Mama’s Banana Nut Muffins

Ingredients
  

  • 3 Large over-ripe bananas
  • 1 Chia Egg or Flax Egg*
  • 2 Tbs Oil I use avocado oil
  • 1/3 Cup Maple Syrup
  • 1/3 Cup Applesauce
  • 1 tsp Vanilla extract
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 1/2 Cups Whole Wheat Flour
  • 1 Cup Chopped Walnuts or Pecans

Instructions
 

  • Preheat Oven to 350 Degrees
  • Line or lightly grease 12-cup muffin tin
  • Mash bananas in a large bowl
  • Stir in the remainder of the wet ingredients
  • Sprinkle the baking soda salt and cinnamon on top and stir until combined
  • Gently stir in flour until barely combined
  • Fold in walnuts
  • Scoop mixture into muffin tin and bake for 20-22 minutes until a toothpick inserted in the center comes out clean

Notes

I do a lot of modifying recipes. This recipe was modified from Well Plated’s Healthy Banana Muffins to make them plant based a little less processed. They are so good and get the “we will have this again!” stamp of approval from the family.
 * How to make a Chia or Flax Egg – place 1 TBS of chia or flax seeds and 2.5 TBS water in a small bowl and stir. After a few minutes, stir again. Let sit for 5 minutes and then it is ready to use!
