Martha Stewart’s Garlic Cauliflower and Mushrooms

Super easy and delicious side dish will elevate any meal.

Ingredients
  

  • 1 head cauliflower cut into florets
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 8 oz. mushrooms (button or Baby Bella) wiped clean and sliced
  • salt and pepper to taste
  • 1/4 tsp red pepper flakes optional

Instructions
 

  • Preheat oven to 400 degrees F or 200 degrees C
  • In a large bowl, toss the cauliflower florets with 1 tsp of olive oil, minced garlic, salt and pepper
  • Spread the cauliflower mixture on a baking sheet in a single layer and roast in the oven for 20-25 minutes or until the cauliflower is slightly browned and tender.
  • In a large skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the sliced mushrooms and saute until they are browned and tender, about 5-7 minutes.
  • Once the cauliflower is roasted, add it to the skillet with the mushrooms. Mix with well to combine and season with additional salt and pepper, adding red pepper flakes if desired

Notes

This is the easiest dish!  Suggest using parchment paper to roast the cauliflower (great for all roasting for easy clean up).
