Mashed Potatoes and Gravy

Healthy and delicious version of everyone's favorite comfort food.

Ingredients
  

  • 5 large Yukon Gold potatoes Wash well. Leave skin on. Cut into 1 inch pieces
  • 2 tsps Kosher salt
  • 2 tbsps Earth Balance spread
  • 1/2 cup plant milk Oat milk works well
  • Pepper to taste

Instructions
 

  • Add potatoes to a large pot. Cover potatoes with water (about 3 inches above the potatoes). Add 1 tsp salt.
  • Bring to a boil, then lower to medium heat for 12-15 minutes, until very tender but not mushy.
  • Drain potatoes and put in a large mixing bowl.
  • In same pot, heat plant milk and melt spread. Add salt and pepper.
  • Pour over potatoes and with a hand mixer or masher, whip or mash the potatoes.
    Note: do not over whip, as the potatoes can become "pasty".
  • Additional seasoning to taste. Can add more plant milk and spread to taste.

Mushroom and Bean Gravy

  • Wash and slice 1 lb mushrooms (button or baby Bella)
  • Dice 1/2 onion
  • In a pan, saute mushrooms and onion in 1/2 tsp olive oil. Let mushrooms cook down and release the juice.
  • Drain and rinse 1 can of white beans (Great Northern). Add to mixture.
  • Add one cup of vegetable broth
  • Add seasonings: Rosemary, Thyme, Sage, Garlic and onion powder. Salt and pepper to taste.
  • Pour mixture into blender and blend. Can add more liquid for thinner consistency.

Notes

This version is every bit as delicious and satisfying as the “traditional” recipe.  Removing the saturated fats makes this healthier.  Mushroom gravy does the trick.  
Leaving the skin on keeps retains the benefits of vitamins, minerals and fiber.
Make this your own: some people like thicker mashed potatoes and some like smoother and creamier.
