Moroccan Stew

Ingredients
  

  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 large sweet potatoes cubed (skin on)
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp ginger minced
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 tsp kosher salt
  • 1/4 tsp pepper
  • 1 15 oz. canned tomatoes with juice
  • 2 cups vegetable broth or water
  • 1 15 oz. can garbanzo beans drained and rinsed
  • 1 cup peas
  • 2 cups baby spinach
  • Nutritional Yeast
  • Couscous or quinoa

Instructions
 

  • Heat pot to medium high heat. Heat oil.
    Sauté the onion for about three minutes.  Add the garlic for another minute.⁠
    Stir in the seasonings, tomatoes, and broth/water.⁠
    ⁠Bring to a soft boil and add the potatoes.
    Lower to simmer. Cook potatoes until tender. About 15 minutes.
    Add the garbanzo beans and peas. Cook for another 5 minutes.
    Add the spinach and mix through until spinach is wilted. About a minute.
    ⁠While stew is cooking, prepare 2 cups dry quinoa or couscous per package directions.⁠

Notes

Notes: This recipe is very flexible and forgiving.  Season to taste.  
Can use regular potatoes.  Add different veggies.
