Red Lentil Sauce

Red Lentil Sauce

Versatile sauce for pasta or other grains. This can be used as a sauce or side dish.

Ingredients
  

  • 1 cup red lentils rinsed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp olive oil
  • 1 15 oz. can diced tomatoes with juice
  • 1 15 oz. can tomato sauce
  • 1 cup vegetable broth or water for thinner sauce
  • 1 tsp oregano dried
  • 1 tsp basil dried
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp Kosher salt
  • 1/4 tsp pepper
  • 1/4 tsp chili flakes optional
  • 1 tbsp nutritional yeast sprinkle over

Serving suggestions: can serve over pasta, couscous, polenta, quinoa or rice.

Can add in other vegetables: saute carrots and celery; zucchini, etc. to make a heartier sauce to serve as a side dish.

Instructions
 

  • Heat pot to medium high to warm olive oil
  • Saute onion for three minutes
  • Add garlic and saute for another minute
  • Add tomatoes, sauce, broth/water, and seasonings. Stir in.
  • Add lentils and stir in.
  • Bring to a soft boil for about three minutes.
  • Reduce heat to simmer
  • Let cook for about 15 minutes until lentils are soft.

If you are adding vegetables, cook together a little longer for all vegetables to be tender.

    Notes

    This is an easy and flexible recipe that can be used as a sauce or thicken for a side dish.
    As always, season to taste.
    Red lentils are a fantastic source of protein and fiber.
