Split Pea Soup

Protein-packed hearty and delicious soup for dinner.

Equipment

  • 1 Pot or Dutch Oven
  • 1 Blender or immersion blender

Ingredients
  

  • 1 medium onion diced
  • 2 carrots (can use orange, yellow, or white) diced
  • 2 stalks celery diced
  • 2 cups split peas (green or yellow) rinsed
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 6-8 cups water or vegetable broth
  • Salt and pepper to taste

Instructions
 

  • In a pot, heat oil on medium heat
  • Add onions, carrots, and celery and saute for three minutes
  • Add split peas and seasonings. Stir everything together.
  • Add water/ broth and bring to a gentle boil for about 5 minutes.
  • Lower to simmer. Simmer for 30 minutes until peas are really soft.
  • Take half the portion and blend or immersion blend gently. You want smooth soup with a little texture.

Notes

Split peas have lots of protein (16 grams per cup), fiber, folate, iron and potassium.
Adjust liquid for level of thickness.  I like mine thick!
White or yellow carrots help keep the soup greener vs turning a brown-green.  Equally nutritious.
