Sweet Potato and Onion Hash

Ingredients
  

  • 2 cups white or orange sweet potatoes medium dice
  • 1 cup 1 medium onion or 1/2 large onion thinly sliced
  • 1/2 cup carrots julienned
  • 1 tsp salt
  • 1 cup dashi 1 oz. kelp (wipe of white layer). Soak in 5 cups of boiling water for about 10 minutes. Optional: 3/4 cup bonito flakes
  • 1 cup scallions (white and green) chopped
  • 2 tbsps soy sauce add more if needed.

Optional Miso Dressing

  • 4 1/2 tbsps olive oil extra virgin
  • 3 tbsps rice vinegar
  • 1 tbsp white miso
  • 1 1/2 tsp honey or agave
  • 3/4 tsp sesame oil
  • 3/4 tsp soy sauce

Instructions
 

  • In a large saute pan, stir-fry sweet potatoes, onion, and carrots over medium-high heat with salt in oil for 2-3 minutes
  • Add dashi broth, cover, and lower heat to simmer until potatoes are tender–about 10 minutes
  • Turn off heat; add scallions and soy sauce to taste.

Notes

You can use white, purple or orange sweet potatoes.  Simple side dish that can be served hot or cold.  Would add the miso dressing.
