Stuffed Mushrooms

One of my favorite sides of all times is stuffed mushrooms. They are quick and easy to make, and packed full of veggies. Below is one of my favorite ways to make them, but I would love new recipes to try! Post your favorites below!

Course Side Dish

Ingredients
  

  • 16 Oz Cremini Mushrooms
  • 1 Tbsp Avocado Oil
  • 1/4 Cup Nutritional Yeast
  • 4 Cloves Garlic minced
  • 1 Cup Onion chopped
  • 10 Oz Spinach chopped
  • Sea Salt
  • Black Pepper

Instructions
 

Prep the Mushrooms

  • Preheat the oven to 400 degrees F
  • With a damp paper towel, wipe down each mushroom until clean
  • Stem mushrooms and remove gills (if using portobello)

Make the Stuffing

  • On medium heat, sauté garlic and onion until translucent in a tablespoon avocado oil
  • Add chopped spinach, nutritional yeast, salt, and pepper to taste
  • Once spinach is soft and ingredients are full mixed, remove from heat

Assemble and Cook

  • Lightly spray stemmed mushrooms with avocado oil
  • Add spinach mix to center of mushrooms, filling to top
  • Place stuffed mushrooms on sheet pan and bake until mushrooms are tender all the way through, about 25 minutes

Notes

This is a great recipe to make your own! I sometimes chop additional mushrooms to add into the mixture, add extra veggies like squash or bell pepper, and top with a little sprinkle of parmesan. So good!
