Nothing to It Easy Veggie Pasta

  • 1/2 lb Your Favorite Pasta
  • 1 Jar Rao Pasta Sauce Or your favorite pasta sauce (check the ingredients)
  • LOTS Veggies


This recipe isn’t really a recipe but an easy evening meal and an excuse to talk about ratios. 
Pasta, especially white pasta, is not the greatest and not the worst. If you find a whole wheat or other pasta that you love, run with it. If not and you love white pasta, you don’t have to go without. But work to change the ratios. On the left is typical spaghetti meal. TONS of white pasta, itty bit of red. On the right is a great ratio of pasta and veggies. Which one has more fiber? More vitamins? More goodness? You got it. Both super yummy. One is worth it. 
Just like the Kitchen Sink Salad, you can do Kitchen Sink Pasta and include whatever veggies you have in your fridge. Things I like to add to my veggie pasta: 
Squash, Mushrooms, Peppers, Red Onions
Chick Peas, Tomatoes, Peppers, Broccoli
Asparagus, Mushrooms, Sun-dried Tomatoes
