Cauliflower-Sweet Potato-Butternut Squash Stew

Equipment

  • 1 large pot or Dutch oven

Ingredients
  

  • 1 tsp olive oil
  • 1 onion diced.
  • 2 carrots diced. Washed well. Do not peel. Leave skin for added vitamins and fiber.
  • 1 celery stalk diced
  • 1 head of cauliflower florets (or can use a bag of pre cut)
  • 1 medium sweet potato diced. Leave skin on for added vitamins and fiber
  • 1 10 oz. bag of butternut squash fresh or frozen
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbs miso paste
  • 5 cups water
  • 1 15 oz. can great northern (or any white bean) rinsed and drained
  • 1 tbs curry powder
  • salt and pepper to taste
  • 1 bunch or large handful spinach and/or kale

Instructions
 

  • Heat pot and add oil.
  • Add onion and saute for 2-3 minutes.
  • Add garlic and ginger and saute for another minute
  • Add cauliflower, sweet potato, and butternut squash and stir in.
  • Dissolve tbs. miso paste in one cup boiling water. Add to pot. with the other 4 cups of water. Stir everything together.
  • Add seasonings. Always to taste. Add more curry if you like.
  • Bring to a soft boil for 5 minutes. Reduce to simmer for 20 minutes.
  • During last few minutes, add spinach and/or kale to wilt.
  • Serve over brown rice, farro, quinoa, or favorite grain using package directions.

Notes

This dish is so flexible. Easy to make in batches to freeze or have as leftovers.  Tastes even better the next day!  You can make this thicker to be a stew or add more water for soup.  Can leave chunky or blend.  Use other veggies: white potatoes, broccoli, add a can of diced tomatoes.  Use different beans.
For other options, add a can of coconut milk and some Thai paste.
Change seasonings: Add Italian seasonings (oregano, basil) and serve over orzo pasta or couscous.
Using miso paste adds a salty element without the harmful effects of sodium if you have high blood pressure.
It’s really important to have easy, go-to recipes that you can just throw together and have a delicious and filling  meal.
