These terrifyingly tasty Vegetable Spiders make a perfect Halloween party appetizer! Featuring crispy rice paper parcels filled with savory tofu and vegetables, complete with baked carrot legs, these creative bites are sure to be the talk of your spooky spread.

Ingredients
  

  • For the body:
  • 6-8 Rice paper sheets 22cm diameter
  • 400 g Firm tofu
  • 200 g Mushrooms
  • 2 Ripe tomatoes
  • 1 Small onion
  • 2 Garlic cloves
  • 3 tablespoons Whole breadcrumbs
  • 1 teaspoon Cumin
  • 1/2 teaspoon Smoked paprika
  • Fresh chopped parsley
  • Salt and pepper
  • Olive oil
  • For the legs:
  • 48 Thin strips of baked carrot about 3-4 inches long each
  • Alternatively: baked zucchini strips or celery stalks
  • For the eyes:
  • Black sesame seeds
  • Tomato paste for “glue”
  • For the cobweb:
  • Beetroot puree

Instructions
 

Prepare the filling:

  • Finely chop onion, garlic, and mushrooms.
  • In a pan with a little olive oil, sauté onion and garlic for 2 minutes until fragrant.
  • Add chopped mushrooms and cook for 5 minutes until softened. Add crumbled tofu, chopped tomatoes, and spices.
  • Cook for 8 minutes, then incorporate breadcrumbs and parsley. Let the mixture cool completely.

Form the spiders:

  • Working with one sheet at a time, dip rice paper in warm water for 5-10 seconds until pliable but still slightly firm.
  • Place about 2 tablespoons of filling in the center.
  • Gather the edges and twist to form a bundle, shaping it into an oval spider body.
  • The rice paper will stick to itself and create a sealed package. Repeat with remaining sheets and filling.

Add legs and eyes:

  • For legs: Insert 4 baked carrot strips on each side of each spider body (8 legs total).
  • Make small slits in the rice paper to secure the legs firmly.
  • For eyes: Use a small dab of tomato paste to attach two black sesame seeds to the front of each spider for eyes.

Bake

  • Place the assembled spiders on a parchment-lined baking sheet. Lightly brush or spray with olive oil.
  • Bake at 180°C (350°F) for 15-18 minutes until the rice paper is crispy and golden.

Serve

  • Create a cobweb design on your serving plate using beetroot puree. Arrange the baked vegetable spiders on top of the cobweb. Serve warm.
