Transform a classic snack into a delightfully centerpiece for your Halloween spread! These Spooky Carrot Fingers are surprisingly simple to make and pair perfectly with a smoky, "bloody" sauce for a creepy-crawly snack that's both healthy and funny.

Ingredients
  

  • For the Hummus:
  • 2 Garlic cloves
  • 2 cups Cooked chickpeas 19oz can, drained and rinsed
  • 1 Lemon juiced
  • ¼ cup Tahini
  • 2 Tbsp Olive oil
  • ½ Tbsp Cumin
  • ½ tsp Cayenne pepper adjust for spice level
  • ¼ tsp Black pepper
  • Salt to taste
  • For the Carrot Fingers & Platter:
  • 15 Baby carrots peeled
  • 30-40 Almond slices for multiple fingernails
  • For the "Bloody" Sauce:
  • ½ cup Tomato paste
  • 2 Tbsp Water
  • 1 Tbsp Olive oil
  • 1 Tbsp Balsamic vinegar or lemon juice
  • 1 tsp Smoked paprika
  • ½ tsp Garlic powder
  • A pinch of salt

Instructions
 

Make the Hummus:

  • Place the garlic in a food processor and process until chopped.
  • Then add the chickpeas, lemon juice, tahini, olive oil, cumin, cayenne pepper, black pepper, and salt.
  • Once you do that, blend until completely smooth. Add a tablespoon of water if it's too thick.

Prepare the Carrot Fingers:

  • Select 5 of the best-looking carrots to be the "fingers." Cut them to a uniform, finger-like length (about 3-4 inches).
  • Use a small, sharp knife to cut a flat, shallow notch at the top of each "finger" where the nail would be.
  • Fill the notch with a tiny amount of hummus and press an almond slice into it to create a fingernail.
  • For extra creepiness, you can use the tip of the knife to make small lines on the knuckles.

Make the "Bloody" Sauce:

  • In a small bowl, whisk together the tomato paste, water, olive oil, balsamic vinegar, smoked paprika, garlic powder, and salt until smooth. The consistency should be slightly thinned but still able to drizzle.

Assemble the Platter:

  • Place the remaining hummus in a shallow serving bowl. Stick the prepared carrot fingers into the hummus so they look like a hand emerging from the dip. Cut the remaining carrots into sticks and arrange them around the base of the "hand."
  • Just before serving, drizzle the "bloody" tomato sauce over the hummus and let it drip down the sides of the bowl and onto the base of the platter. For a gruesome touch, you can also drizzle a little over the carrot fingers themselves.
